NEW YEAR/VEGA$$/ASPEN

Happy New Year!

(okay it's only like 3 weeks late, but hey better late than never)

Even though I'm 3 weeks late, I still want to write down my goals for the year. Sometimes I feel like my goals are bigger than myself, but it's important to dream, right?

1. Care more & love more - Near Christmas time last year my dad had a heart attack. He ended up having to have triple bypass surgery, and is doing great now! It just made me realize how important phone calls, texts, letters and how time spent with family & close friends is the most important thing in life, because you never know what will happen to someone you love and life is too short not tell someone you love them.

2. Eat less processed foods - I've been reading too much about how these "drugs" can damage your belly, your brain and overall wellbeing… and I'm trying to lose about 10-15 lbs

3. Blog more - This sounds stupid, but I really want to get into sharing memories and sharing recipes too! Eventually, like in 10 years, want to have a cute restaurant or something & blogging about food will help me do this!

4. Become independent from my parents - Almost there, just need to pick up some more bills from them!

5. Skydive in Dubai - I'm so fortunate to be able to go to Abu Dhabi next month for training school for work, and Dubai is like an hour away from there, so of course I want to do something crazy there!
 
6. Scorpion Pose in Yoga- I've been practicing yoga for about 5-6 months now continuously, but on and off for about 6 years (mostly off in those 6 years). I definitely feel an improvement and can get into trickier poses, so for this year my goal is to be able to do the scorpion-for those of you who don't practice, it is basically where you are on your forearms, in a hand stand and you flip your legs all the way over to touch your head, like a scorpion haha. I'll be very hopeful about this one.

7. Eat at a fancy restaurant that I paid for myself - Because I love food, and want to treat my friends and family, instead of someone or my parents, always treating me

8. Go places I've never been with zero expectations - Because YOLO, lol.

9. Have fun and don't worry!

I think my year started out in perfect harmony with my goals!  I traveled to Aspen and Vegas, and literally had the time of my life.

One Week 'til "Real Life"

All summer I've been wanting to start a blog, and finally one week before I start my full time job, I finally got to it!

This summer has been full of food and mini adventures! I started out the summer by going sky diving, then took a 3 week trip to Thailand, spent lots of time in Austin, traveled all around Texas- Abilene, Corpus Christi, the Valley (southern tip of Texas), & Uvalde, and of course spent tons of time at home cooking!

Here are a few pics from my trip to Thailand, but I'll be doing a whole post about it soon, because it was so incredible!

In between all the travels, I learned how to make THE BEST focaccia bread, which is great for open faced sandwiches with grilled chicken and roasted onions & garlic. I'll post pics when I do another batch (my parents love it, so it will definitely be soon.)

I also learned the art of canning and preserving!  I made blueberry-nectarine jam which pairs great with frozen fruit and yogurt, a raspberry-chipotle jam that ended up being a staple on the focaccia bread,  a cinnamon-nutmeg pear jam with low-sugar from pears my grandma gave and she loved it! I also tried my hand at pickles (which are super easy)!
